The Data Edit Control can be used as a basic hex editor. When a packet is loaded by default, the editor is in hex editing mode. The control will also be set to hex editing mode whenever you click on a hex byte.
You can switch to ASCII character editing mode by clicking on an ASCII byte (to the far right).
